Light Roast vs. Medium Roast vs. Dark Roast

The roast level changes the way coffee tastes. That's really it.

Light, medium, and dark roast aren't different types of coffee beans. They're different levels of roasting, and that changes the flavor, body, acidity, and overall character of the coffee.

If you've ever stood in front of a wall of coffee wondering what the hell you're supposed to buy, here's the breakdown.

Light Roast

Light roast coffee is roasted for less time, so more of the bean's original characteristics come through.

You’ll usually get more noticeable acidity and brighter flavors. Depending on the coffee, that can mean fruity, floral, citrusy, or even tea-like notes.

Light roast doesn't mean weak. It also doesn't automatically mean more caffeine.

If you like coffee that tastes a little more complex or want to actually taste where the coffee came from, light roasts are worth trying.

Medium Roast

Medium roast sits right in the middle.

You still get some of the coffee's original character, but roasting brings out more sweetness and body. It's usually a pretty easy place to start if you're not sure what you like.

Medium roasts work well for pretty much everything. Drip coffee, pour-over, cold brew, espresso. Whatever you're making.

Dark Roast

Dark roast spends more time in the roaster, which creates a deeper, heavier flavor.

You'll usually notice more roast character, less acidity, and flavors that lean more toward chocolate, caramelized sugar, or toasted notes. Dark roast can also have a heavier body and a more pronounced bitterness, depending on how far it's roasted and how it's brewed.

If you want a bold cup that tastes like coffee and not a science experiment, dark roast might be your thing.

So which one should you buy?

There's no correct answer.

If you like brighter and more complex coffee, try a lighter roast.

If you want something balanced and easy to drink, go medium.

If you want something darker and heavier, go dark.

At First Rite, The Sable is our dark roast house espresso blend, while Crypt Roast and Nightmare Roast are both medium roasts with completely different purposes.

Try a few. Figure out what you actually like. Then buy more of that.
